Last night we made stir-fry and so did some Bok Choy clear cutting in the garden. It was time to use the Bok Choy, since it has started bolting. Bolting is what happens when leafy vegetables get too warm (or old) and then quickly put out vertical flower-bearing stalks. This usually has a negative impact on the leaves' taste.
